Use the best carrots you can find (organic, regeneratively grown). Baby carrots work really well for this recipe!

Simply follow these steps in order to make simple roasted carrots:

Instructions

  1. Preheat the Oven to 200°C (400°F).
  2. Prepare the Carrots
    • wash the carrots and make sure most are evenly sized. Remove ones that are odd sized or cut in half to make them uniform in size.
  3. Season
    • Place the carrots in a large mixing bowl.
    • Drizzle generously with olive oil and sprinkle with salt. Toss to coat evenly.
  4. Arrange on a Baking Tray
    • Line the baking tray with parchment paper (optional for easy cleanup).
    • Spread the carrots in a single layer, ensuring they’re not crowded.
  5. Roast
    • Place in the oven and roast for 25-35 minutes, flipping once halfway through.
    • The carrots should be tender with golden, caramelized edges.
  6. Serve
    • Remove from the oven, toss gently, and serve hot.

For extra depth, squeeze fresh lemon juice or sprinkle with fresh herbs before serving. Simple, flavorful, and perfectly roasted every time.
