Filipe's Background

Coming from Portugal I grew up with great cooks in the family. My grandmother was a professional cook and she instilled a real sense of love for food in me. I spend hours helping her in the kitchen. My grandparents both had their homesteads in the village we live in now and I spent most summers right here on this land helping my grandfather farm. Sophie and I are both passionate about growing our own produce as chefs and we have opened multiple successful restaurants together since 2011 in different parts of the world. With the Farming Chefs we hope to inspire people to cook with regeneratively grown produce, teaching them how to build flavour whilst also building soil!

I am a trained chef, organic farmer and entrepreneurial spirit who loves to create. I studied at Leith's School of Food & Wine in London and worked in restaurants all over the world before opening up our first ever restaurant in 2011. We found our niche when we openend our second -Farm to Table - restaurant and organic farm a few years later. When cooking Farm to Table Food you are blessed with a wide variety of high quality local produce and an ever changing succession of abundance. Our new venture The Farming Chefs sets out to change the culinary scene and inspire new chefs/ home cooks and foodies all over the world to start cooking with regeneratively grown produce straight from the farm!

What is our mission?

We live in a time where soil is being lost at a faster rate than one can imagine. Desertification is a real problem and societies have collapsed because of just that. Many people want their impact to be positive and so do we. As professional chefs we care about delicious food. As Farmers we care about a healthy soil. Soil health is directly related to farming practices. Unfortunately right now conventional methods are destroying topsoil. Regenerative farming means you are actively growing topsoil while you grow your produce. This is done by no dig/ no till practices,  integrating grazing livestock, increasing biodiversity on farms, getting rid of all chemical inputs, working alongside nature and selling locally as much as one can.

We all know our day to day choices make an impact. What we eat is maybe one of the most important day to day choices we make. After years of serving ever changing menu’s in our restaurant inspired by whatever came from the farm we realised that there is no better way to change the world than through your diet and the way you cook. You get to eat delicious food, while you grow fertility for generations to come! We get excited about a future in which farms have a bright future ahead of them and farmers are plentiful.  Providing us with happy, healthy & nutrient dense, chemical-free food!

Don’t get us wrong, we are no hardcore activist who believe in convincing people. We believe in making a change where you can! We advocate a DIVERSE, SEASONAL, FARM SOURCED, OMNIVOUROUS style of cooking. Not everyone can become a local regenerative farmer. But there are plenty of ways to support them! Many young, new farmers are popping up all over the world growing food using regenerative methods. It is now our turn, as eaters, as home cooks and as professionals to embrace this much needed change in our food system by learning how to make the most delicious, diverse and exciting food we can, using local, farm sourced ingredients! And it is not about following recipes, it is about understanding the skills it takes to prepare food. Once you master the skills, it is time to get creative!
