Garlic scapes are the flowering stem of a garlic plant. these are usually available in spring time. If you have a local farmers in your area that grows vegetables, he might have them for sale. They are not easy to come by in a store, as they perish quite quickly. In Chinese supermarketers they have garlic chives. these can be used as a substitute. If these are all hard to come by, consider planting some garlic next fall or late winter in a pot and enjoy this dish as a speciality when they start to flower!
Slice up your entire garlic scapes in 2 cm long pieces.
In a hot wok, add the oil and then strip fry your garlic scopes on high heat, tossing them around constantly for about 3-4 minutes.
When cooked but not too golden yet, add in the dry old rice.
Toss the rice around for another 4 minutes tops and then serve it!

Best served fresh! This dish does not tore well.
Combine with a nice and fragrant meat dish. Anything asian inspired usually works well. But a more classical chicken dish like our lemon and thyme chicken thigh dish is also a winner!
