Making Herby À la Provence Spice Rub

This herby À la Provence spice rub is sunshine in a jar. It leans aromatic rather than spicy, with dried herbs, garlic and tomato flakes giving it a rounded Mediterranean feel.
It’s ideal for roasted vegetables, whole chicken, grilled zucchini, potatoes, and even stirred through olive oil as a bread dip. This is a blend you’ll reach for midweek when food needs to be simple — but still taste like care was taken.

40 g coarse sea salt
40 g green bell pepper powder
20 g dried garlic powder
12 g tomato flakes
5 g dried thyme
3 g dried oregano
Best used with olive oil and moderate heat.
Add early in cooking to allow herbs to soften and release aroma.
If using on meat, rub with oil first to avoid herb scorching.
Dry jar first
Ensure your jar is fully dry to protect the herbs.
Start with sea salt
Add the coarse sea salt as the base layer.
Add green pepper powder
This brings freshness and colour.
Layer garlic and tomato
Add garlic powder followed by tomato flakes for visual contrast.
Finish with herbs
Add thyme and oregano last — they’re lighter and more aromatic.
Seal and label
Use within 6–9 months for optimal flavour.
Always use a dry spoon — moisture is the enemy of spice mixes.

Is this similar to classic Herbs de Provence?
It’s inspired by it, but greener and fuller thanks to green pepper and tomato.
