But because these foods can support the growth of Clostridium botulinum — the bacterium that causes botulism — it’s crucial to follow FDA- and USDA-approved safety practices every single time.

Why Pressure Canning Is Necessary

Low-acid foods (pH above 4.6) cannot be safely preserved in a water-bath canner. These foods require temperatures of 240–250°F (116–121°C) to destroy botulism spores — a temperature only reached using a pressure canner.

Foods that must be pressure canned include:

  • Vegetables (carrots, green beans, mushrooms, peppers, potatoes, etc.)

  • Legumes (beans, chickpeas, lentils)

1. Use an approved pressure canner — not a pressure cooker

Electric pressure cookers and Instant Pots cannot safely pressure can food.

7. Inspect every jar before storing

Check for:

  • A firm, concave lid

  • No leaking, bulging, or spurting

  • Properly sealed jar

  • Clear, normal-looking food

  • Clean jar rim

If anything looks suspicious:
When in doubt, throw it out.

8. Store jars properly

Store finished jars:

  • In a cool, dark place

  • Between 10–21°C (50–70°F)
