Make-Ahead Advice:
This dish can be partially prepared in advance to save time. Prepare the cauliflower with the rub and keep it covered in the refrigerator for up to a day before you plan to cook it. When you’re ready, simply preheat the oven and proceed with the baking as per the recipe. This approach not only saves time but also allows the flavors to marinate into the cauliflower, enhancing the taste.

Instructions:
Step 1: Make the rub by mixing all the ingredients together in a small bowl. The consistency should be that of thick pancake batter. If it’s too thick, add a bit more water.
Step 2: Clean and prep the cauliflower by washing it and cutting off the bottom leaves in a way that allows the cauliflower to rest on its stem.
Step 3: Preheat your oven to 400°F (200°C).
Step 4: Rub your cauliflower, both on the bottom and the top, with the marinade. Place it in an oven dish large enough to hold the cauliflower.
Step 5: Bake for 45 minutes. Cover with aluminum foil if the cauliflower starts to burn.
Spice Customization: Feel free to adjust the amount of masala spices to suit your taste. If you like it spicier, add a bit more, or reduce the quantity for a milder flavor.
Crispy Finish: For an extra crispy exterior, remove the aluminum foil for the last 10-15 minutes of baking. This will allow the cauliflower to develop a nice, golden crust.
