Simply follow these steps in order to make The whole broccoli plant with parmesan crisps:

1. Prepare the Broccoli

  • Stems: Trim off the tough outer layer of the stems, then slice the tender inner part into thin rounds.You can also of this with some of the bigger nerves of the bigger leaves, if you have them!
  • Florets: Cut the florets into bite-sized pieces.

2. Make the Parmesan Crisps

  • Preheat the oven to 180°C (360°F) 
  • On a baking sheet lined with parchment paper, sprinkle large sprinkled of parmesan cheese (grated) well spaced apart.
  • Bake for 5–7 minutes, or until the cheese melts and turns golden brown. Let the crisps cool on the tray—they’ll harden as they cool. 

3. Sauté the Broccoli

  • Heat olive oil (or butter) in a large skillet over medium-high heat.
  • Add the broccoli and sauté until fragrant, about 1 minute. Add the sliced stems first, as they take longer to cook, and sauté for 2–3 minutes.
  • Add the florets and leaves, stirring to coat in the oil. Season with salt
  • add a bit of water and let it steam for about 3–5 minutes until tender-crisp. If necessary, add a tablespoon of water to help the steaming process.
  • Season with salt

4. Serve

  • Transfer the sautéed broccoli to a serving dish.
  • Top with the crispy Parmesan rounds for a delightful crunch
