Here are some essential tips for BBQ’ing with charcoal

  1. Choose Quality Charcoal: Opt for natural lump charcoal for a cleaner burn and better flavor, avoiding lighter fluid to keep your food free from chemical tastes.

  2. Create a Two-Zone Fire: Arrange coals on one side of the grill for direct, high-heat cooking and leave the other side for indirect, slower cooking, giving you greater control over temperature and cooking times.

  3. Be Patient and Preheat: Allow the coals to turn ashy gray (around 20-30 minutes) before cooking; this ensures even heat and prevents flare-ups.

  4. Use Vents to Control Heat: Adjust the grill’s air vents—more airflow means a hotter fire, while reducing airflow lowers the temperature, making it easier to manage.

  5. Add Wood Chips for Smoky Flavor: For extra flavor, toss soaked wood chips onto the coals, which will add a rich smokiness to your food without overpowering it.

 

Directions

Simply follow these steps in order to make sticky  BBQ ribs:

1. Preheat and Prep

  • Preheat your BBQ to a medium-low heat, around 120-140°C (250-285°F) for indirect grilling. For charcoal, arrange the coals on one side, and for gas, only light one side of the burners.

2. Cook

  • Put the racks on the grill and make them sizzle (take care the meat is 20 cm from the charcoal)
  • Slow cook for 45 hours, maintaining the BBQ temperature. This slow cook helps tenderize the meat
  • Turn around occasionally

4. Baste with BBQ Sauce

  • After 45 minutes, baste the ribs with BBQ sauce using a brush 
  • Put the BBQ rack down, so the heat is up
  • Continue grilling for 10 minutes for a sticky, caramelized layer. Watch closely to prevent burning
  • Keep the lid of the BBQ closed to get a smoked effect

5. Finish and Serve

  • Once the ribs are tender, remove them from the grill. Serve on a platter (sliced or as whole racks)

Storage

Once the bread is baked, let it cool completely on a metal rack. Once it is cool you can start cutting into it. Fresh baked bread is delicious. If you want to keep it from going stale, keep the bread in a cotton bag in a shaded cool place.
