Making Sesame and Banana Cookies

Oats are one of the few grains that naturally contain avenanthramides, powerful antioxidants known for their anti-inflammatory and heart-protective properties. Not only are oats rich in fiber—especially beta-glucan, which helps lower cholesterol and stabilize blood sugar—they’re also incredibly versatile. From breakfast porridge and baked goods to savory dishes, oats have been a staple in human diets for thousands of years, with evidence of oat consumption dating back to the Bronze Age!

  1. Preheat the oven to 180°C (350°F). Grease or line a small baking dish with parchment paper.
  2. Mix the base: In a bowl, combine the oatmeal, flour, coconut sugar, and butter. Mix until crumbly.
  3. Add the wet ingredients: Stir in the shredded apple and marmalade. Mix until well combined.
  4. Shape the cookies: Press the mixture into cookie cutter shapes on the baking dish to form an even layer.
  5. Bake: Bake for 25-30 minutes or until golden brown.
  6. Cool and slice: Let cool completely before cutting into bars.
