  • 400 grams of dark green leafy greens (such as kale, broccoli leaves, or Russian kale)
  • 1 head of garlic, cloves thinly sliced
  • 150 ml olive oil
  • Salt to taste

  • 10 gr of your mother dough mixture
  • 30 gr wholemeal flour
  • 60 ml of  water

Our Starter is fed 100% Wholemeal Flour, this is to give the bread more flavour as the flour contains the wholegrain. You can use white flour or any other grain you prefer. The best flour for starting end feeding would be rye due to its high nutrient content and levels of naturally present lactobacilli.

 

Directions

Simply follow these steps in order to make your dark greens:

  1. Prepare the Garlic

    • Separate the garlic cloves from the head, peel, and thinly slice them. Set aside.
  2. Heat the Oil

    • In a large skillet, add the olive oil and warm it over medium heat. Once hot, add the sliced garlic.
  3. Crisp the Garlic

    • Sauté the garlic in the oil for about 2-3 minutes, or until it turns golden brown and crispy. Be careful not to let it burn, as this can make it bitter. Use a slotted spoon to remove the garlic chips from the pan, setting them aside on a plate lined with a paper towel to drain.
  4. Sauté the Greens

    • In the same skillet, add the dark greens to the garlic-infused oil. Sauté for 5-7 minutes, or until the greens are wilted and tender. Season with salt to taste.
  5. Serve

    • Transfer the greens to a serving dish, sprinkle the crisp garlic chips on top, and serve immediately.

Storage

Sautéed Dark Greens with Crisp Garlic are best enjoyed fresh, as the greens can become limp and lose their vibrant color when stored. However, if you have leftovers, let them cool completely before transferring to an airtight container. Refrigerate for up to 2 days.
