  • 300 g of whole carrots
  • extra virgin olive oil
  • salt
  • juice of half a lemon
  • 1 tbsp honey
  • small handful of fresh dill

Make sure that the carrots are covered evenly before you start roasting to ensure the best results. Furthermore use a tray that is big enough to hold the carrots next to each other so they don’t lay on top of each other to have an overall nicely roasted finish.

Directions

Simply follow these steps in order to make roasted carrots with honey-lemon-dill-glaze:

Step 1:

Thoroughly wash the carrots and let them dry for a moment.

Step 2:

Preheat the oven to 200 °C.

Step 3:

Place the carrots in an oven tray, cover in olive oil and sprinkle with coarse sea salt.

Step 4:

Set them in the oven and roast for about 25 minutes. Toss after 15 minutes to ensure a nice roasted finish on all sides.

Step 5:

Prepare the glaze by adding honey, lemon juice and olive oil into a small bowl. Mix everything together.

Step 6:

Wash and then finely chop the fresh dill. Add to the glaze and mix well.

Step 7:

Once the carrots are done, take them out of the oven and pour over the honey-lemon-dill glaze. Gently toss to coat the carrots with the glaze.
