🌶️ Hot and Spicy Smoked Aubergine Dip
Step 1: Roast all the aubergines on an open flame until they are soft and the entire skin is burned. Move the aubergine around to burn it equally all over. This normally takes around 10-15 minutes. Set aside to cool down for further use.
Step 2: Prepare your ingredients for the dip by cutting up the onion, garlic, green pepper, and chili.
Step 3: Sauté your onions in olive oil until they are golden. Add in the garlic and sauté for about a minute. Then add in the green pepper. When the ingredients are no longer raw, add in the spices and salt. Step 4: Leave this on low heat to caramelize and quarter your tomatoes. Then add them in and toss them around for a minute on high fire. Set the whole thing aside until the aubergines are ready to be peeled. Now you can mix the whole together. Step 5: Mix together with the fresh basil and season to taste. Can be served lukewarm as well as cold. Keeps in the fridge up until one week in an airtight container.

Step 3: Squeeze lemon juice and add in the yogurt. Step 4: Set the whole thing aside until the aubergines are ready to be peeled. Step 5: When the aubergine is cool and peeled, mix it in with the diced-up ingredients and season with olive oil, salt, and black pepper. Mix it firmly to combine the lemon juice with the olive oil, increasing the smoothness.
🍳 Herb and Aubergine Egg Fritter

Step 2: Chop all ingredients, besides the aubergine, finely and mix it in with 4 eggs. Beat the whole and season it heavily with salt.

Step 4: With a fork, squash the flesh of the aubergine into a flat flower-like figure.
Step 5: Get sunflower oil hot for frying and pass your aubergine in your egg mixture. Then fry them for 2 minutes on high heat until golden brown. Voilà done! Enjoy!
