Ingredients
For the Spice Mix
- Peel and seeds from 10 kg of tomatoes
- 2 tbsp dried oregano
- 1 tbsp salt
- 1 tbsp black pepper
Tools
- Passevite or passata machine
- Dehydrator
- Wax paper
- Spatula or spoon (for flattening)
- Blender
Useful guidelines
The thinner the better
When you spread out the seed and peel, make sure you spread it out as fine as you can. This will shorten teh dehydration process greatly.
Directions
Simply follow these steps:
Step 1: Separate the peel and seeds from the pulp using either a passevite (blend the tomatoes whole and then pass through a sieve) or a passata machine.
Step 2: Allow the seeds and peel to drain for a few hours.
Step 3: Spread out the mix onto dehydrator trays and flatten them. Then score the mixture to increase the surface area, ensuring proper drying.
Step 4: Dehydrate until they are completely dry and crisp at 60°C (140°F). This can take anywhere from 8 to 24 hours.
Step 5: Break the dried mix into smaller pieces and blend them in a high-speed blender until you achieve a coarse powder. Then add the dried oregano, salt, and pepper. Mix well.
Storage: Store in a glass container in a dark place for up to 1 year.
