Ingredients

  • 8 whole small beetroots, with leaves
  • onion
  • garlic
  • extra virgin olive oil
  • salt

Tools

  • Cutting board
  • Knife
  • Pan

Useful guidelines

When slicing the beetroots make sure that you get slices that are all the same thickness as you’ll otherwise end up with uncooked pieces inbetween.

Directions

Simply follow these steps in order to make baby beets from head to toe:

Step 1:

Start by separating the leaves from the beetroots. Wash both parts.

Step 2:

Next, cut the baby beets in half and then slice thinly. Roughly chop the leaves as well.

Step 3:

Peel the onion and the garlic. Cut the onion in half and slice into half rings. Chop the garlic roughly.

Step 4:

Set your pan on the fire and heat up a generous amount of olive oil. Add the beetroots to the pan and fry for about 5 minutes.

Step 5:

Now add in the onions, keep frying and stir every noun again. 

Step 6:

Next step is adding the garlic. Fry for a couple more minutes.

Step 7:

Lastly add the beet leaves. Keep frying and gently stirring until the leaves are just cooked through. This takes about 1-2 minutes.

Step 8:

Season with salt and you are ready to serve.

Storage

Best enjoyed fresh and warm.
PRO TIP:

Due to the high sugar content in beets they’ll easily burn once you go past the point of perfectly golden (and sweet) beets. So be sure to keep a close eye on your pan when cooking the baby beets.
