  • 42 garlic cloves, peeled

  • 4 tablespoons olive oil

  • Salt, to taste

  • 14 toothpicks or mini skewers

  • Small knife (for peeling, if not using pre-peeled garlic)

  • Clean work surface

  • Brush or spoon (optional, for applying oil)

Useful guidelines

Choose fresh garlic if you want full flavor and nutrition. Pre-peeled cloves work in a pinch, but they’re often blanched and less potent.

Use toothpicks or cocktail sticks that are oven-safe and uncoated.

Skewers should be evenly sized to ensure uniform roasting.

Directions

Simply follow these steps in order to make roasted garlic skewers:

  1. Prep the Garlic
    Peel and clean all garlic cloves. If you’re using pre-peeled garlic, give it a quick rinse and dry with a towel.

  2. Sort by Size
    On a clean surface, sort the cloves from largest to smallest. This helps balance each skewer visually and in portion size.

  3. Skewer the Cloves
    Thread 3 garlic cloves per toothpick, going from largest to smallest. You should have 14 skewers total.

  4. Oil & Season
    Lightly grease your oven tray with olive oil. Roll or brush each garlic skewer in the oil. Sprinkle with salt to taste.

  5. Roast
    Preheat the oven to 170°C / 338°F. Place the skewers on the tray and roast for 20 minutes, flipping halfway through (around 8–10 minutes in) to ensure even browning.

  6. Serve Warm
    Remove from the oven when golden all over. Let them cool slightly—best served warm but not hot.

Storage

Store cooled skewers in an airtight container in the fridge for up to 3 days.

Reheat in the oven at 150°C (300°F) for 5–7 minutes before serving.

Not freezer-friendly—roasted garlic changes texture when frozen and reheated.
