Our Starter is fed 100% Wholemeal Flour, this is to give the bread more flavour as the flour contains the wholegrain. You can use white flour or any other grain you prefer. The best flour for starting end feeding would be rye due to its high nutrient content and levels of naturally present lactobacilli.

Prepare the Potatoes
Peel the potatoes and cut them into thin matchstick strips. For uniform size, use a mandoline or a sharp knife.
Soak the cut potatoes in a bowl of cold water for at least 30 minutes to remove excess starch.
Drain and pat them dry with paper towels.
Heat the Oil and Chicken Fat
In a deep frying pan or pot, heat the sunflower oil and chicken fat over medium-high heat. The mixture should be hot but not smoking (around 175°C or 350°F).
Fry the Potatoes
Fry the matchstick potatoes in batches to avoid overcrowding. Fry for 3–5 minutes or until golden and crispy.
Use a slotted spoon to transfer the fries to a paper towel-lined plate to drain excess oil.
Add Garlic and Parsley
In the same pan, reduce the heat to low. Add the minced garlic and fry for 30 seconds until fragrant (be careful not to burn it).
Toss the fries back into the pan with the garlic.
Add the chopped parsley and toss to coat evenly.
Season and Serve
Sprinkle the fries with salt to taste and serve immediately.
Just don’t try to store fries :D! They are best served fresh!
If you want to prepare for a dinner party, you could pre-fry them until crisp but not golden and refry them just before serving. Add garlic and parsley only when you fry before serving.
