- 8 eggs
- extra virgin olive oil
- salt
- 150 g feta cheese
Tools
- Bowl
- Whisk or fork
- Pan
- Spatula

This recipe is not a classical French omelet, but delicious nonetheless!
Directions
Simply follow these steps in order to make fluffy omelet with feta:
Step 1:
Crack the eggs into a bowl.
Step 2:
Whisk until the egg white and egg yolk are well mixed.
Step 3:
Set a pan on the stove and add a generous amount of olive oil.
Step 4:
Wait until the oil is very hot before you add the eggs. This way your omelet will be light and fluffy.
Step 5:
Now add the eggs, some salt and use a spatula to push the outer edges towards the center of the pan.
Step 6:
After a few minutes turn off the heat and crumble the feta above of the egg.
Storage
Serve warm and fresh. If you have leftovers, you could store them in fridge and use for an egg sandwich the next day.
PRO TIP:
If you don’t have feta cheese available, any other semi-soft and salted cheese works fine as well.
